Position Summary
Will oversee the direction and implementation of all food /beverage research and development for a global restaurant group. This individual will be directly accountable for the creation of new menu items from a culinary and financial perspective while maintaining its core menu base. This person is responsible for developing menu items that drive revenue to the restaurants that create a unique and diverse menu options. The execution on of the rollout and implementation process will be critical so the ideal candidate will have a positive track record that demonstrates this ability.
Essential Functions
Responsible for development of new food and beverage items for multiple menu rollouts each year.
Maintenance and sanitation guidelines and standards.
Partner with Purchasing/Logistics to ensure highest quality product and best-negotiated cost.
Ensure USDA/FDA/HAACP and global standards are consistently adhered to.
Coordination of food reviews.
Partner with Training to ensure menu rollout training prepares Operations for successful implementation.
Frequent site visits to ensure policies and procedures are adhered to.
Partner with Worldwide Operations on the logistics of execution of product.
Partner with vendors to develop outside products used to support menu.
Develop and execute Quality Assurance standards used during BOH inspections.
Assist in hiring and training of Chefs in the field.
Provide employees with tools and supplies needed for success.
Ensure compliance with all regulatory requirements.

Requirements
MINIMUM
10 plus years of proven success with menu development/review and profitability of changes.
He/She will be able to anticipate and resolve problems and needs of the department.
He/She will possess a take-charge ability tempered with diplomacy.
This executive should be a very hands-on manager and will possess the insight to anticipate problems and the sophistication with which to resolve them.
This person will be a strong decision maker who can spot and generate well-formed ideas.
He/She will possess superior communications and interpersonal skills.
The role requires 50% domestic/international travel.
He/She will need to possess true operational knowledge in order to partner with the Operations team.
This individual will likely come from an environment where he/she has been challenged to create cutting edge creative research and development approaches. As such, this individual must have proven exposure to and experience with initiating ideas and seeing them through to execution.
College degree required.
PHYSICAL DEMANDS
Ability to move throughout the corporate kitchen, office, and cafes during visits (standing, walking, kneeling, bending) for extended periods of time.
Ability to tolerate exposure to heat, cold, chemicals, and loud/noisy environment.
Ability to travel via auto or airplane for long periods of time.
